Closed Captions on VODs. I have been using OBS baked in closed captions so people can use a button on the video player to turn captions on and off, because I find the twitch plugin thing to be obnoxious. I could swear it used to also save the captions for my VODS, but lately none of my VODS have a captions button.

If music is a "big part" of your stream then you need a complete rethink. Unless you composed or hold a license to broadcast music it doesn't matter if it gets muted in your VODs or not, you're still in breach of copyright and can face legal consequences. All music is copyright, all of it, unless you're paying a license for "Royalty Free" music
A VOD is a recording of your entire stream, including the live chat as it happened. These VODs can stay saved on your channel for up to 14 days (or up to 60 days if you’re either a Twitch Partner or subscribed to Twitch Turbo and/or Amazon Prime). In order to save your streams as VODs, you have to enable the option before beginning the stream.
